Our Story

Mavras is the brand of a family that migrated from Crete to Küçükkuyu under the shade of the olive tree. It is the story of generations. Mavrazade was our family name on the island of Crete. As is the surname we were given in 1934 under the Surname Law, after arriving in the Republic of Turkey through the population exchange. Mavras is the union of these two names, Mavrazade and As.

Today, we bring that same family heritage to the United States under the Lyrassos brand, the American home of Mavras olive oil. Every bottle of Lyrassos carries the story, the soil, and the standards of our family's groves in Küçükkuyu.

The quality of our oil comes from our long-lived, stubborn olive trees. Grown on sun-facing slopes sheltered from the northern winds, at the foot of the Kaz Mountains, the oxygen source of the world, our olives ripen on the branch with all their natural character intact. The olive oils we press from the Küçükkuyu region deliver a soft, pure flavor to your palate.

The Mavras Olive Oil Mill

The Mavras mill was built among the olive valleys at the foot of the Kaz Mountains, equipped with next-generation technology and standing as the continuation of a centuries-old family tradition. Each October and November, olives are early-harvested from our organic-certified Mavras groves and pressed into oil the same day.

Thanks to the state-of-the-art technology and strict hygiene we maintain at our facility, our olives are separated from their leaves, washed and showered, sent to the crusher, and from there moved by atmospheric-pressure piston pump, oxygen-free, vacuum-sealed, and below 26°C, into the malaxers. After a maximum of 10 minutes of malaxation, the olive paste passes through a fully enclosed decanter where the oil is separated. Following separation, we obtain Mavras olive oils that are exceptionally high in polyphenols, minerals, and nutritional value.

What sets Mavras apart from our competitors is this. Every stage of production, from the care of our groves to the harvest, from oil production to storage, bottling, and sale, takes place under our own supervision, in our own facility.

The quality of Mavras olive oils comes from the centuries-old olive trees at the foot of the Kaz Mountains. In this world-renowned, mythological region, our olives, grown on slopes sheltered from the northern winds, reach the peak of flavor. The oils pressed from them bring soft taste and complete purity to consumers, adding health to the table and joy to the palate.
